The Atoma Diamond plate #140 grit is the gold standard for whetstone flattening. It removes material extremely quickly and allows you to flatten your stones with relative ease. While other synthetic truing stones will abrade and wear over time they will tend to lose their flatness especially quickly when truing exceptionally wonky stones. The Atoma in comparison is mounted on a solid aluminum block that will remain flat through all the highs and lows you throw at it! They are also great for repairs as they can very quickly remove steel from a knife. We wouldn't make a habit of using it to sharpen knives though as doing so will pull diamonds off the surface making it less and less effective as a flattening or sharpening tool. Should you wear out your diamond plate, you can peel off the diamond pad and replace it down the road when that time comes.#140 is quite coarse and will leave DEEP scratches when thinning, it is not recommended to thin a knife unless you have an adequate progression of stones to work out those scratches. It is sometimes stated that the #140 will leave the surface of your stone too rough, though unless working on razors, we've not noticed it to be an issue, nothing a quick kiss with a nagura won't fix if you are though!

The Naniwa Professional line (previously known as the Chosera line) are super hard splash and go stones. These stones are slow wearing, fast cutting and HARD. They have a higher amount of abrasives and less binder than other lines from Naniwa, and are one of the best lines of stones money can buy in our opinion!A 1000 grit stone is our first recommended stone in everyones kit, its coarse enough to cut in a relatively dull knife, and fine enough that with lightened up hand pressure you can polish your edge up enough to be able to shave your arm hair! If you already have 1000 and 5000 grit stones this may be a little redundant but can be a great bridge to go between something like a 700 or 1000 to an 8000 for edge work or a fantastic stone to finish your knives on to maintain some tooth. We also feel that this is a perfect stone to touch up an edge when a full sharpening progression isn't needed. For bevel work we've found the Ouka to feel very similar to the Rika,soft and very smooth with a good amount of mud. The stone cuts quickly and can provide a nice contrast between your cladding and core steel.

This 6000 grit stone is great to finish your edges on carbon or powdered stainless steel knives. It leaves a nicely polished edge and with lots of elbow grease can be used to polish bevels. Being a splash and go stone, its super quick to hone your knives every few days without setting up a soaking basin and keep your knives razor sharp, and away from the lower grit stones for longer. While I don't always recommend taking German steels up to this high of a grit, this #6000 is an exception and leaves surprisingly good edges on such knives, be sure not to spend too long on them or you might polish all the tooth out! While they aren't necessary for the sharpening process they sure make the experience a whole lot more enjoyable. This stone holder gets the whetstone you're using to sharpen your knives up off the surface you're working on giving you much more space for you knuckles. The rubber feet are also quite sticky and keep your whetstone from sliding around on even the most slippery of surfaces. Easily Adjustable by using the screws to tighten against the whetstone and fits every stone we've ever used it with even the monstrous Kikuichi stone we carry. Made from heavy duty stainless steel we treat the one's we use at the shop with less respect than we should and they still perform beautifully and will last a lifetime.
