The Atoma Diamond plate #400 grit is the gold standard for whetstone flattening. It removes material extremely quickly and allows you to flatten your stones with relative ease. While other synthetic truing stones will abrade and wear over time they will tend to lose their flatness especially quickly when truing exceptionally wonky stones. The Atoma in comparison is mounted on a solid aluminum block that will remain flat through all the highs and lows you throw at it!They are also great for repairs as they can very quickly remove steel from a knife. We wouldn't make a habit of using it to sharpen knives though as doing so will pull diamonds off the surface making it less and less effective as a flattening or sharpening tool. Should you wear out your diamond plate, you can peel off the diamond pad and replace it down the road when that time comes. While it will cut a bit slower than the #140, it will leave a smoother finish on the stone as is what we usually use to flatten our higher grit stones of around #5000 and up or to kick up a quick slurry on a natural stone.

The Suehiro Debado MD whetstones are splash and go stones with fantastic feedback and cutting speed. The generous size makes these great for working with larger knives. These stones are much harder and slower wearing than the Cerax series and they don't kick up much mud like softer stones which makes them great for keeping clean and monitoring your work. #1000 Grit 225x90x27mm MD-100

Winners of numerous design awards and supporters of the Japanese national team at the Bocuse D'or their knives are popular with professional chef's and home cooks alike. The Knife From The Ryusen Hamono Website... "— Fine product with the warmth of natural wood, functionality and grace —This Japanese modern kitchen knife combining a blade where beautiful patterns stand out with a Japanese-style octagonal handle is also a popular model in overseas countries.High-quality ATS314 steel, which provides amazing sharpness and is commonly used for knives, barber/hairdressing scissors and other cutting tools, is used for the blade core. The blade is made of this core ATS314 steel and 63-layer stainless steel sandwiching the core, and was forged with the traditional Ryusen forging technique. It is a top-end blade achieving long-lasting sharpness and an elegant design. The octagonal Japanese-style handle is made of curly maple, characterized by its natural color tone, providing a gentle texture and grip. Octagonal handles have long been popular not only because the number eight is considered lucky in Japan, but also they are easy to grip. The elegant and warm feel and design provided by the natural wood come to fit the user's hand neatly with long use. Since this is a refined kitchen knife with long-lasting excellent sharpness, beauty and ease of use, it is perfect not only for everyday cooking, but also as a gift for your close friends." The Shape The Bunka is a mid sized prep machine that is as versatile as it is cool! The K-tip or reverse tanto brings the tip closer to the board making them great for intricate tip work and usually means a flatter profile which is great for chopping or push cutting and makes it a more viable (though still limited by length) slicer. These knives are great for home cooks uncomfortable with larger knives or smaller workspaces, and are great for professionals looking for something a little more compact to reduce the fatigue of longer use sessions for busy prep days! Knife Care (Stainless Steel) Although this knife is made from stainless steel we do still encourage our customers to keep their knives as dry and clean as possible. NO DISHWASHER - the high heat will ruin the wooden handle. Wash and dry by hand using regular dish soap and warm water using a none abrasive sponge or cloth. Ensure the knife is dry before being put away for storage and ensure the edge of the knife is protected to avoid any unnecessary dulling. Avoid Bones, Frozen foods, nuts and hard candies or anything other than fruits, vegetables and proteins.

This 6000 grit stone is great to finish your edges on carbon or powdered stainless steel knives. It leaves a nicely polished edge and with lots of elbow grease can be used to polish bevels. Being a splash and go stone, its super quick to hone your knives every few days without setting up a soaking basin and keep your knives razor sharp, and away from the lower grit stones for longer. While I don't always recommend taking German steels up to this high of a grit, this #6000 is an exception and leaves surprisingly good edges on such knives, be sure not to spend too long on them or you might polish all the tooth out! While they aren't necessary for the sharpening process they sure make the experience a whole lot more enjoyable. This stone holder gets the whetstone you're using to sharpen your knives up off the surface you're working on giving you much more space for you knuckles. The rubber feet are also quite sticky and keep your whetstone from sliding around on even the most slippery of surfaces. Easily Adjustable by using the screws to tighten against the whetstone and fits every stone we've ever used it with even the monstrous Kikuichi stone we carry. Made from heavy duty stainless steel we treat the one's we use at the shop with less respect than we should and they still perform beautifully and will last a lifetime.
